For people seeking intuitions and lots of detail presented approachably:

• Statistical Rethinking by Richard McElreath.
  • This book doesn’t use brms, but here’s a translation into brms + tidyverse by A Solomon Kurz.
• McElreath has a series of free lectures too.

For people seeking more formalisation and math:

• An Introduction to Bayesian Data Analysis for Cognitive Science by Bruno Nicenboim, Daniel Schad, and Shravan Vasishth.
